Arroz Con Queso
crockpot, vegetables, vegetarian
1.50 cup raw rice; long-grain*
1.00 cup whole tomatoes (16 oz)**
1.00 cup mexican style beans (16 oz)
3.00 garlic cloves; minced
1.00 onion; large; finely chopped
2.00 tablespoon vegetable oil
1.00 cup cottage cheese
1.00 cup green chili peppers; ***
2.00 cup montery jack cheese****
*converted rice; **mashed; ***(4-oz), drained; ****grated, or process cheese. Mix thoroughly all ingredients except 1 cup of the grated cheese. Pour mixture into well-greased crock-pot. Cover and cook on low setting for 6 to 9 hours. Just before serving, sprinkle with reserved grated cheese. 6 to 8 servings
