Pumpkin Butter #1
crockpot, spreads
10.00 cup raw pumpkin
2.00 lemons
1.00 teaspoon ground ginger
1.00 teaspoon ground cinnamon
0.50 teaspoon ground allspice
0.75 teaspoon salt
2.50 lb brown sugar
1.00 cup water
Peel pumpkin and grind in food chopper. Extract juice from lemons; add to pumpkin along with spices, salt and sugar. Let stand overnight. Then add water and boil gently until pumpkin is clear and the mixture is thick. Pour into sterilized jars and seal while hot. This can also be cooked in the crockpot.
