Mary's Hoisin Chicken

6.00 chicken breast halves without skin
0.25 cup hoisin sauce
0.25 cup plum sauce
0.25 cup soy sauce
1.00 medium piece fresh ginger root; thinly sliced
1.00 lime; juice of *
3.00 tablespoon cornstarch
Mix all the ingredients (except chicken) in a bowl. Add chicken; coat well and put it all in a crockpot. Cook 5-6 hours on low. Serve with rice.
